Cocoa mass, also known as chocolate liquor or cocoa paste, is a pure substance obtained from cocoa beans, available in semi-solid and solid forms. It contains both components of the cocoa bean in equal measure: cocoa butter and solid cocoa particles.

Origin of Cocoa Paste / Liquor Blocks

Cocoa paste is naturally derived from ground cocoa nibs, sourced from the fruit of the cocoa tree Theobroma. When raw cocoa beans are ground, the resulting liquid quickly solidifies at room temperature, forming cocoa paste. The content of cocoa paste is entirely natural and contains 55% cocoa butter. This product has a creamy texture and can be used in any chocolate recipe with 100% organic cocoa.

We use the finest cocoa beans and ferment them to reduce their bitter taste for making our cocoa paste liquor. The cocoa beans are peeled, dried, and fermented to produce cocoa paste. First, the cocoa beans are ground into cocoa mass and then melted to make liquor.

Using Cocoa Paste / Liquor Blocks

Cocoa paste liquor is made from peeled, dried, and fermented cocoa beans. These beans are ground into cocoa paste, which is then converted into liquor. The liquor can then be separated into cocoa butter or cooled and converted into solid blocks of raw chocolate. It is primarily used in combination with cocoa butter to make chocolate.

How to Use Cocoa Paste / Liquor Blocks

Cocoa paste is used in various dishes, including chocolate pudding, traditional chocolate bars, chocolate drinks, and chocolate cakes. It can also be added at home to a mix of dried fruits and nuts and is delicious with ice cream or sweet desserts.
